Cooper's Celebrates Expanded Menu, Restaurant Renovations

Owner Scott Hansen debuted his new menu selections and updated decor with a ribbon cutting ceremony.

Cooper’s of Barrington celebrated an extensive new menu and nearly completed restaurant renovations with a ribbon cutting ceremony on May 19.

Owner Scott Hansen was excited to show the public what the new Cooper’s is all about.

“We have a new menu launched. We’ve added 45 additional menu items and that doesn’t include pizza, pasta or quesadilla selections,” Hansen said.

Many of those menu items were available to try at the ribbon cutting event, including the flavorful Granny’s Apple salad, Turkey Summer Swiss sandwich on moist pretzel bread, and crowd favorites Baby Back Ribs and chicken wings.

The freshly remodeled interior of the restaurant at 117 S. Hough isn’t quite finished, but Hansen said the sophisticated décor fits in well with the new menu.

“[The remodeling of the restaurant] reflects more of the quality of food we’re now serving,” Hansen explained.

A crowd of Barrington Area Chamber of Commerce (BACC) members, Cooper’s food lovers, and community members gathered to support Hansen and his staff at the event. BACC President Janet Meyer and Chairman Michael Beightol stood beside Hansen as he cut the first red ribbon. He cut the ribbon again while surrounded by his staff.

“I want to thank everyone for coming out and taking the time. I hope you’ve had an opportunity to enjoy some of the food,” Hansen said with a smile.

Hansen hopes community members who haven’t visited his eatery lately will stop by to see what all the hype is about.

“We feature pretzel bread sandwiches, organic salads, some amazing barbeque and a full line of catering that’s very popular,” he said.
