Hatch Chiles are back! Grown only in the fertile Hatch Valley of New Mexico, Hatch Chiles are considered by chile aficionados to be the best roasting peppers in the world. Melissas authentic Hatch Chiles are truly delicious, with a distinctively robust and earthy flavor not found in any other chile. They are large, thick skinned, meaty and come in a variety of heat levels to suit every chile-lover's craving. Try them in rellenos, burgers, omelets, hot dogs, burritos, tacos, on pizza, corn bread, cookies, sauces and seafood.

Every September, you can hear the popping and crackling of Hatch Chiles roasting in specialized chile roasters throughout the towns of New Mexico. Grocery store parking lots, street corners, seemingly everywhere, you can smell the aroma of roasted chiles.

Authentic New Mexican Hatch Chiles are a favorite Southwestern chile. These chiles are named after the original growing area in Hatch, New Mexico. Growers and Chefs alike say that the intense sunlight, hot days and cool nights in this valley result in a uniquely flavored chile. The valley, which stretches along the Rio Grande’s southern-most bend before crossing into Texas and Mexico, is covered with row after row of green leafy Hatch chile plants for most of the summer.  Hatch Chile roasts are a celebration of the ripening of this prized chile. These chiles have a meaty flesh and mild-medium heat.
